Mexican Bean Salad

So tonight the kids and Blake ate leftovers for dinner and I made myself a salad.  These are the ingredients that I used...
Hearts of Romaine
Organic Beans (chickpeas, kidney beans, and pinto beans)
Tajin (Mexican seasoning)
Fresh Snow pea pods
Tomato
Avocado
Salsa
Blueberries
Olive oil

I cooked the snow pea pods and tomatoes with olive oil and Tajin for a few minutes.  I made guacamole using the avocado, salsa, and a little lime juice.  I warmed the organic beans with pepper and drained them.  Then I just mixed everything together for a nutritious and delicious salad on top of romaine lettuce :)

Korean BBQ Chicken

Okay, so this is my first posting on this blog....I am looking for an easy way to share my family meals with my sisters and anyone else that might be interested!  Let me start by saying that I am NOT a chef...I am just a mom of 5..soon to be 6 ...children that spends alot of time cooking and cleaning up after them :)  I am simply going to post pics of our meals...and usually the kids and my husband will eat a few more things than I will, so I will show pics of their meal and my meal.  All of my meals are made up on the spot....I don't use recipes...and I usually don't plan very far ahead.

Tonight we had .......................

Korean BBQ Chicken

For this meal I used 2 packs of fresh chicken tenderloins.  I got them on sale from Aldi for 2.51 a piece!
I put the chicken in the crock pot in the morning with water, salt, black pepper, red pepper, BBQ sauce, and 2 spoonfuls of Gochujang.  Gochujang[1] (Korean고추장IPA: [kotɕʰudʑaŋ] Koryo-mar:кочхицай/кочхидян (regional)) is a savory, spicy, and pungent fermented Korean condiment made from red chili, glutinous rice, fermented soybeans and salt.
Gochujang seems to be Bobby Flay's favorite Asian condiment, so this is why I first tried it :)
I don't have any measurements for the spices;  season to suit your own tastes:)  
The chicken cooked all day on low.
Then I decided to serve the chicken as tacos and nachos for the kids.  Some of them ate the chicken as tacos with freshly shredded cheddar cheese and soft tortillas.  I served this with fat free refried beans, a side of blueberries, tomatoes, and chips and salsa.
I ate my chicken as a salad with: hearts of romaine, the Korean BBQ chicken, tomatoes, Black bean salsa, blueberries, a little fresh cheddar and a bit of refried beans.  I so badly wanted some fresh avocado on there as well, but it just wasn't quite ripe enough to cut.

Chicken Tenderloins or breasts
Gochujang
BBQ sauce

Soft Tortillas
Tortilla Chips
Tomato
